Avocado, Crabmeat and Caviar Pasta

You don't need to cook anything - just mix everything while you boil the pasta - it's as simple as that!

Ingredients

Pasta for 2 people
Avocado 1
Crabmeat (ready prepared) 1
Lumpfish caviar 2 tbsp
Yogurt (fat free) 4 tbsp
Vegetable stock 1 tsp

Method

Start cooking the pasta. Put the ripe avocado, yogurt and vegetable stock in a bowl. Coarsely smash the avocado with a fork.

I used this half white, half brown crabmeat pack. It has a much deeper crab flavour than just white crabmeat.

When the pasta is ready, add it to the avocado mixture in Step 1. Add the crabmeat and lightly mix. Garnish with the lumpfish caviar, you could also squeeze some lemon juice over if you like.
