Mixed Seafood Pasta

A delicious pasta full of mixed seafood.

Ingredients

Frozen mixed seafood 150g
Olive oil 2 tbsp
Shallot 1/2
Garlic 1 clove
Butter 1/2 tbsp
Dried chilli 1
Fish stock cube 1
Spaghetti 100g

Method

Boil the pasta. Drop in a fish stock cube instead of salt (or stick with salt if you prefer). Finely chop the shallot.

Heat a frying pan on medium heat and add the smashed garlic. Add the shallot and stir fry. Add the butter and crushed dried chilli.

Add the frozen seafood just before the butter starts to burn and stir fry until thawed. Add 3 ladles of pasta water and reduce the sauce to 1/3.

Shake the pan to emulsify the oil and water - this is really important.

Add the boiled pasta gently into the frying pan and stir for 1 minute with tongs.

Transfer to a serving dish and sprinkle with some finely chopped parsley or some Parmigiano Reggiano.
