Choi sum 200g
Salt a pinch
Sesame oil 1 tsp
Sauce:
Oil 2 tbsp
Ginger 1 thumb
Garlic 1 clove
Oyster sauce 2.5 tbsp
Soy sauce 1 tsp
Sesame oil 1 tsp
Pepper a pinch
Water 4 tbsp

Method

1
Wash the choi sum well and chop off the root ends and separate the stems. When the hot water boils, add the salt and sesame oil and boil the choi sum for 3 minutes before draining in a colander.
2
Put the oil in a frying pan and stir fry the finely chopped garlic and ginger for 30 seconds. Add all the sauce ingredients and boil down until thickened. Adjust to taste.
3
Arrange the cooked choi sum on a dish and pour the sauce on top. Enjoy!

Tips & Note

It's great to add salt and sesame oil when boiling the choi sum as it raises the temperature and keeps the vegetable nice, crisp and green!
