Oven Baked Rainbow Trout in a Herb Butter Sauce

Use lots of your favourite herbs to get a lovely flavourful sauce.

Ingredients

Rainbow trout (whole) 1 per person
Butter 1/2 tbsp
Salt & pepper 1/2 tbsp each
Fresh herbs 1 tbsp
(such as parsley, tarragon, dill, thyme or mixed)

Method

1
Remove the scales from the trout using the back of a small knife from the tail upwards.

Sprinkle 1 level tsp salt onto the trout and keep aside for at least 20 minutes.

Chop the herbs finely. If you like thyme, tarragon or rosemary, use just use the leaves as the stalks are too hard.

Put the trout onto some foil and slash diagonally.

Sprinkle both sides with pepper. On one side, sprinkle the herbs and put the butter on top.

Close and seal the foil loosely to give space inside and put into a preheated oven 200C for 15 minutes.

Tips & Note

At Step 2, when you salt the fish, keep aside for at least 20 minutes (preferably overnight) to allow the salt to penetrate into the flesh. At Step 5, the trout will steam cook completely in the foil so you need space and lots of herbs for this.
