Steak & Guinness Cheese Pie

Ingredients

Stewing beef 250g
Onion (medium) 1
Carrot (medium) 1
Celery 1
Mushrooms 4-5
Rosemary 1
Puff Pastry 1
Garlic 1 clove
Butter 1 tbsp
Beef stock cube 1
Guinness 440ml
Cheddar cheese 60g
Flour 2 tbsp
Egg 1

Method

Remove the excess fat and fibres from the beef and chop into bitesize pieces Season with salt & pepper. Chop all the vegetables into small pieces to cook quickly.

Put 3tbsp olive oil into a large frying pan and fry all the ingredients. Add the butter and rosemary as well.

When everything is cooked, add 250ml Guinness and beef stock (cube dissolved in water). Sift 2tbsp flour into the pan.

Once it's boiled, transfer to an ovenproof dish and cover with foil. Put into a preheated oven 170C for 2-2.5 hours.

When the sauce has reduced, add half the cheese.

Line another dish with the pastry and pour in Step 5. Sprinkle over the remaining cheese.

Make a pastry lid and seal with the excess pastry around the edge. Use the back of a knife to make a criss cross design on the pastry. Brush with beaten egg, particularly the sealing edges.

Put it back in the oven 170C for 40 minutes before serving. Enjoy your hot Guinness!

Tips & Note

●Guinness gives a lovely bitter taste, so will be enjoyed by adults.
●It's a bit tricky to make your own puff pastry, so it's better to buy it.
