Refreshing Vermicelli (Maloney) Salad

A simple side salad with a refreshing Japanese flavour.

Ingredients

Vermicelli or maloney 50g
Cucumber 1/3
Onion 1/4
Cherry tomatoes 5-6
Rocket or salad leaves a handful
Salt 1 tsp
Vinegar 2 tbsp
Lemon juice 1 tbsp
Sugar 1 tbsp
Noodle stock concentrated (mentsuyu) 1 tbsp

Method

Cut the cucumber into fine strips and sprinkle with salt to remove moisture.

Finely slice the onion and roughly chop the tomatoes. Cut the salad leaves into 2-3cm lengths.

Cut the vermicelli or maloney into bitesize lengths (5cm) and boil for 3 minutes. Wash in cold water and drain in a colander.

Put the vermicelli, squeezed cucumber, salad vegetables and seasonings in a large bowl and mix. Transfer to a serving dish.

Tips & Note

If you don't like your onions too hot, soak them in water first.
