Asparagus Salad With Boiled Egg, Onions & Bacon

All the ingredients were in my fridge. The flavour of the bacon and the sweet onions give it a nice touch. The dressing is so simple with extra virgin olive oil and balsamic glaze.

Ingredients

Lettuce 2-3 leaves
Baby plum tomatoes 3-4
Asparagus 4
Bacon rashers 6
Onion 1/2
Eggs 2
Olive oil 3 tbsp
Extra virgin olive oil as required
Balsamic glaze as required
Salt & pepper as required
Finely chopped parsley as required

Method

Hard boil the eggs and cut into quarters. Wash the lettuce and pat dry. Tear into pieces. Finely slice the onion.

Snap off the end root of the asparagus and cut the tips into half. Boil in salted water for 1 minute, drain and pat dry.

Put the olive in a frying pan and add the 1cm wide sliced bacon strips. Add the onions when the bacon is cooked and soften.

Arrange the lettuce attractively on a dish with the boiled egg, plum tomatoes, bacon, onion and asparagus.

On top, pour over the extra virgin olive oil and balsamic glaze. Sprinkle the finely chopped parsley and season with salt & pepper.

Tips & Note

●I used smoked streaky bacon this time.
●Balsamic glaze is available in small bottles near balsamic vinegar. It's sweet and sticky, so handy to use in dressings. If you can't find it, you can make your own glaze by adding some honey to balsamic vinegar.
