Beansprout Stir Fry (Chanpuru)

It's delicious even when cold, nice and crunchy.

Ingredients

Beansprouts 200g
Firm tofu 150g
Bonito flakes 5g
Fish sauce (nam pla) 2 tbsp
Sake 1 tbsp
Spring onions 4
Sesame oil as required
White sesame seeds as required
Sea salt as required

Method

Remove the sprout ends from the beansprouts. Pour over hot water then drain.

Slice the spring onions diagonally and mix with the fish sauce, sake and salt & pepper.

Cook the tofu in salted hot water for 2-3 minutes, then drain well.

Put the oil in a frying pan on a high heat. Stir fry the beansprouts.

Add the tofu broken into pieces. Pour over the sauce from Step 2 and mix.

Add the spring onions. When the tofu is nice and hot, turn off the heat.

Sprinkle over the bonito flakes and mix gently, it's ready to serve.

Tips & Note

●If you can, dry roast the bonito flakes for about 10 seconds, it will give a better flavour.
