Pork and Beansprout Salad with Umeboshi Wasabi Dressing

Ingredients

Pork loin 150g
Spring onions 2
Beansprouts 200g
Shiitake mushrooms 5-6
Dressing:
Pickled plum (umeboshi) 2 tsp
Soy sauce 1/2 tbsp
Sake 1/2 tbsp
Wasabi paste 1/2 tbsp
Sesame oil 1/2 tsp
Potato starch or cornflour 1 tsp

Method

Chop the pork loin slices into 2-3 pieces.

Rub with all the dressing ingredients in a bowl.

Cut the mushrooms into bitesize pieces. Slice the onion thinly and soak in some water together with the beansprouts.

Spread out the beansprouts, mushrooms and pork onto a microwaveable tray.

Microwave for 6 minutes.

Mix gently then serve onto a plate, leaving the juice behind.

Tips & Note

Adjust your microwave time to suit.
I put a bit less salt this time, but you can add more before microwaving it.
