Prawn Infused Miso Soup

I got some prawn heads from my local fishmonger and used them to make this delicious miso soup.

Ingredients

Prawn heads 13
Miso 2 tbsp
Dashi stock granules 1 tsp
Spring onion as required
Water 800ml
Oil as required

Method

I got these prawn heads for 70p! You should wash them.

Put the oil in a heated frying pan and stir fry the prawn heads until they turn brown.

Remove the prawn heads and transfer to a pan. Add the water and dashi stock granules and bring to the boil.

Remove any scum.

Just before it boils, turn the heat off and dissolve in the miso. Add the finely chopped spring onion, then turn the heat back on to warm through.

Again, just before it boils, turn the heat off and serve.

Tips & Note

If you prefer, you can sieve or strain the liquid at Step 4, before you add the miso.
