Creamy Prawn & Brussels Sprouts Pasta

Use leftover sprouts from Christmas, combine with prawns and make a delicious creamy dish no-one will refuse.

Ingredients

Pasta 150g
Prawns (cooked) 70g
Brussels sprouts 6
Shiitake mushrooms 2
Onion 1/2
Parsley as required
White sauce:
Milk 1 cup
Pasta water 1/2 cup
Stock granules 1.5 tbsp
Butter 50g
Flour 2 tbsp
Pepper as required

Method

Wash the sprouts and trim the ends. Boil in salted water for 2 minutes.

Start boiling the pasta. In the meantime, cut the onion and mushrooms to bitesize pieces.

Heat up a frying pan and add butter. Fry the onions until soft. Add the flour and pasta water and cook.

Add the milk and stock granules and simmer until thickened. Add the mushrooms, sprouts and prawns. Season with pepper.

Add the cooked pasta and mix well for 1 minute. garnish with the parsley, it's now ready to serve.

Tips & Note

You can use this white sauce for any creamy pasta dish.
