Celery and Sausage Miso Soup

Ingredients

Mini sausages (chipolata) 4
Celery 2
Chinese leaves 2
Hot water 600ml
Dashi stock granules (or fish stock) 1/2 tsp
Miso (red or mixed) 35-40g
Spring onion 1/2
Chilli powder as required

Method

Slice the sausages and celery diagonally. Roughly chop the Chinese leaves.

Add the dashi stock to the boiling water. Add the white part of the Chinese leaves and the sausages and boil for 1 minute on high heat.

Add the green parts of the Chinese leaves and the celery and boil for a further 2 minutes. Turn the heat down to medium then dissolve in the miso.

Transfer to a soup bowl and sprinkle the finely chopped spring onion and chilli powder on top if you like.
