Steamed Aubergine with Sweet Miso (Dengaku)

This is usually made by deep frying or grilling, but steaming is healthier...and it works!

Ingredients

Aubergine (large) 1
Vegetable oil 2 tbsp
Miso (red) 2 tbsp
Mirin 1.5 tbsp
Sugar 2 tbsp
Sake (or white wine) 1.5 tbsp
Sesame seeds as required

Method

Put all the ingredients from red miso to sake in a pan on medium heat and mix well. Add a touch of water to loosen it if it's too thick.

Cut the aubergine into half lengthways. Score around the inside of the skin to make it easier to scoop out. Score a criss cross pattern as well.

Put the aubergines in a steamer for 5 minutes. Preheat the oven 180C.

Rub some oil on the aubergine surface and spread some sweet miso sauce from Step 1.

Put in the oven for 7-8 minutes. Transfer to a serving dish and sprinkle with the sesame seeds - they look like aubergine seeds!

Tips & Note

●You need to rub some oil on the aubergine at Step 4 to give it a good flavour but it's optional
