Cold Cucumber & Tuna Noodle Soup

Ideal on a hot summery day, it's refreshing and tasty. Works well as a light meal if you don't have a huge appetite.

Serves 2

Ingredients

Crushed sesame seeds 3 tbsp
Miso 1 tbsp
Dashi broth (cold) as required
Light soy sauce or fish sauce (optional) a little
Cucumber 1/3
Salt a pinch
Crushed sesame seeds 2 tbsp
Tinned tuna 2 tbsp
Pickled plum puree 1 tsp
Spring onions as required
Somen noodles for 2 people

Method

Sprinkle the salt into finely sliced cucumber. Rub in then squeeze out the moisture.

Mix the crushed sesame seeds and miso (3:1 ratio) in a bowl. This makes a plentiful sesame miso base that you can use in other recipes.

As you mix it, it will firm up. Add a touch of fish sauce or soy sauce.

Put the tuna in a small bowl and flake.

Mix the tuna and the cucumber from Step 1. Add the crushed sesame seeds and mix.

Put 1 tbsp base from Step 3 into a bowl. Dissolve in some dashi broth a bit at a time and mix well.

I like it quite thick, so I added 150ml dashi broth.

Add the cooked somen noodles, tuna & cucumber from Step 5, the pickled plum puree and finely chopped spring onions into the bowl. Enjoy!

Tips & Note

Adjust to your taste with different amounts of miso base and dashi broth.
