Chop off the stalk and make the bottom flat.

With a knife or your fingers, remove all the leaves (A).

Keep peeling off the leaves until you get to the central hollow (B).

Chop off all the leaves over the hollow (about 2/3 of the whole artichoke).

To prevent discolouration place into water with lemon juice or vinegar.

In boiling water, add the salt, flour, lemon juice or vinegar, then the artichoke and boil for 15-20 minutes.

Remove from the hot water and pat dry.

Once cooled, hollow out the central fibrous part and remove.
