Deep Fried Duck Slices with a Crisp Salad

A refreshing salad with a lovely syrupy sauce that goes well with the duck.

Ingredients

Duck breast fillets 1-2
Light soy sauce as required
Ginger (grated) as required
Chilli powder as required
Mirin as required
Sugar as required
Potato starch as required
Red onion 1
Cabbage 1/4
Parsley (finely chopped) 2 tbsp
Lemon juice 1-2 tbsp
Vegetable oil 3-4 tbsp
Salt & pepper as required

Method

Remove the skin from the duck and slice finely. Add the soy sauce, ginger, chilli powder, mirin and sugar in a bowl and mix. Add the duck and mix and keep aside for 1 hour.

Remove the duck from the marinade and pat dry. Dredge with potato starch.

Finely slice the red onion and soak in water before draining. Finely slice the cabbage and parsley.

Put some oil in a frying pan and heat up on high. Add the duck from Step 2 and fry. Remove and drain excess oil on kitchen paper.

Pour in the marinade from Step 2 into the frying pan and reduce until it becomes a syrupy sauce.

Mix the lemon juice and vegetable oil in a separate bowl and season with salt & pepper.

Mix together the cabbage, parsley and red onion from Step 3 with the dressing from Step 6 and place on a serving dish with the duck on top. Pour over the sauce from Step 5.

Tips & Note

●At Step 4, fry the duck quickly and fiercely on high heat for 1-2 minutes to retain its firm texture.
