Chicken with Artichoke and Pickled Plum (Umeboshi)

Ingredients

Artichokes in oil 5-6
Chicken fillets 4-5
Sesame oil as required
Salt as required
【Pickled plum sauce】
Pickled plum (umeboshi) 1
Noodle broth (mentsuyu) 1 tbsp
Water 1 tbsp
Chopped spring onions as required

Method

Remove the fibres from the chicken. Boil in salted water for 4-5 minutes. When hand hot, pull apart the chicken into strips.

Finely slice the artichoke in the direction of the fibres. Put into a bowl with Step 1.

Remove the stone from the pickled plum and finely chop it. Put into a small bowl with the mentsuyu, water and spring onions, the sauce is now ready.

Pour over the sauce from Step 3 over Step 2. Mix and place into a serving dish. Pour over the sesame oil. It's ready.

The jar I used is pickled artichokes in oil, so it's easy and convenient to use.

Tips & Note

●Try to pull apart the chicken into fine strips so that it mixes better with the sauce.
