Thai Piri Piri Beef on Rice

Very filling and delicious even when cold - ideal for a bento lunchbox.

Ingredients

Minced beef 400g
Yellow peppers 1-2
Garlic 1 clove
Onion 1
Red peppers 2
Seasonings:
Chicken stock 360ml
Fish sauce (nam pla) 3 tbsp
Soy sauce 1 tbsp
Sugar a little
Eggs 4
Potato starch as required
Coriander as required
Cucumber as required
Tomato as required
Vegetable oil as required

Method

Heat the oil in a frying pan and add the finely chopped garlic and onion, and the deseeded and sliced red peppers and fry on medium heat.

Add the minced beef and fry until browned and separate.

Add the fine strips of yellow pepper and fry. Add the seasonings and mix well. Add the potato starch in a bit of water to thicken the sauce.

In another frying pan, make fried eggs.

Put cooked rice in a bowl and pour over the beef sauce from Step 3 and top with a fried egg. Serve with the cucumber, tomato and coriander alongside.

Tips & Note

●The beef sauce is made conveniently thicker by the addition of the potato starch.
