Fried Chicken with Artichoke and Spring Onion Sauce

It's my family's favourite, the hot and sour spring onion sauce.

Ingredients

Artichokes in oil 10 pieces
Chicken thighs 300g
Aubergine (large) 1/2
【Spring onion sauce】
Spring onions (roughly chopped) 3
Garlic (finely chopped) 1 clove
Chinese chilli bean sauce 1 tbsp
Light soy sauce 1/2 cup
Sugar 2 tbsp
Sake 1 tbsp

Method

Chop the chicken into bitesize pieces and season with salt & pepper.

Put the vegetable oil in a frying pan. Fry the chicken pieces skin side down first. Remove when browned.

Cut the half aubergine into half again lengthways, then each quarter into slices 5mm thick. Add to the frying pan and stir fry in the oil from the artichoke jar.

Once the aubergine is cooked, add the artichokes and stir fry.

Return the chicken pieces from Step 2 to the pan.

Make the spring onion sauce: stir fry the spring onion and garlic well with oil from the artichoke jar.

Add the soy sauce, sake, sugar and Chinese chilli bean sauce. Warm gently.

Arrange Step 5 on a serving dish and pour over Step 7.

Tips & Note

●Once the aubergine is sliced, sprinkle with salt and pat dry, this will prevent it from absorbing too much oil.
