Spicy Minced Mackerel (Soboro)

Really great and tasty with rice.

Ingredients

Mackerel 1
Onion 1/2
Carrot 1/3
Ginger 1 thumb
Shiitake mushrooms 4
Spring onion 1/2
Oil as required
【Sauce】
Miso 1 tbsp
Chinese chilli bean sauce 1 tbsp
Soy sauce 2 tbsp
Sugar 1 tbsp
Sake 2 tbsp

Method

Scrape the mackerel flesh off the skin and bones with a spoon.

Finely chop the carrot, onion, shiitake mushrooms and ginger.

Put the oil in a frying pan and heat. Add Step 2 and fry until softened. Add the mackerel pieces and fry.

Add the sauce ingredients into Step 3 and simmer until the liquid evaporates.

Sprinkle the finely sliced spring onion on top and serve.

Tips & Note

●If you're right handed, put the fish head at the top or right to make scraping the flesh out easier.
●You can adjust the heat with the chilli bean sauce.
