Sweet Potato and Mackerel Simmered in Coconut Milk

Ingredients

Sweet potato (small) 2
Carrots 2
Leek 1
Cherry tomatoes 8
Lime or lemon juice 1-1.5
Mackerel fillets 4
Coconut milk 1 tin
Fresh coriander as required
【A】
Garlic (finely chopped) 1 clove
Red chilli 1/2
Thyme stalks 3-4

Method

Finely slice the sweet potato and carrots then cut into half. Roughly chop the leek.

Cut the mackerel into bitesize pieces and season with salt & pepper. Pat dry and drizzle with half the lime juice.

Put a large pan on the heat. Pour in the coconut milk.

Add all the ingredients【A】into Step 3 together with the leek, carrot and sweet potato. Add the remaining lime juice and simmer.

When the vegetables are softened, add the cherry tomatoes and mackerel and season with salt & pepper. Cook for 10 minutes.

Season to taste, you can add more lime juice if you like. Sprinkle with coriander.

This is the cocnut milk I used, a 400ml tin.

When you want to roughly chop a leek, score lengthways first a few times, then cut across.

Tips & Note

●It's tastier if you give this a sharp accent, so use vinegar if you can't get lime
●You can used 2 tinned mackerel (in brine) if you can't get mackerel fillets.
