Asparagus And Deep Fried Tofu With Miso Sesame Dressing

Ingredients

Asparagus 1 bunch
Deep fried flat tofu (atsu-age) 2
Spring onions 2
Grated ginger 1 tbsp
Sesame seeds a bit
Miso sesame sauce:
Toasted sesame seeds 1-2 tbsp
Crushed sesame seeds or tahini or Ji Mah Jang 1 tbsp
Miso 1-1.5 tbsp
Light soy sauce 2 tsp
Dashi broth 3-4 tbsp

Method

Snap the root end of the asparagus, boil, drain and cut in half.

Grill the flat tofu until both sides are browned. You can do this on the gas hob if you like. Cut into 1cm wide strips.

Mix together all the miso sesame dressing.

Put Step 1 and Step 2 into a large bowl and add sliced spring onions. Add half of Step 3 and mix well.

Arrange on a dish and cover with the remaining dressing. Cover with the grated ginger and sesame seeds.

This is the Chinese sesame sauce I used (Ji Mah Jang).

Tips & Note

●If you don't like the heat of spring onions, you can use only one or boil it first.
