Cabbage Gratin in Soya Milk Sauce

Quick and easy and looks great when you have dinner guests.

Ingredients

Pointed or green cabbage 1/2
Mushrooms 3
Onion 1/2
Garlic 1 clove
Salt & pepper a little
[Soya milk sauce]
Potato 1 large or 3 small
Soya milk 1/2 cup
Miso 1 tsp
Cheddar cheese (grated) 3 tbsp
Olive oil 1 tbsp
Salt & pepper a little
Butter as required
Breadcrumbs as required

Method

Peel the potatoes and dice into 3cm square. Steam cook until just soft.

Roughly chop the cabbage and slice the mushrooms 5mm thick. Thinly slice the onions and finely chop the garlic.

Put the oil and garlic in a pan and fry on a low heat until you can smell the garlic. Add the cabbage, mushrooms and onions and fry.

When the vegetables have softened, add the salt & pepper.

Put the cooked potatoes and all the soya milk sauce ingredients together in a blender and mix.

Rub some butter lightly on the inside of the baking dish. Put in the vegetables from Step 4, cover with the sauce from Step 5 and sprinkle with breadcrumbs.

Bake in a preheated oven 220C for 7-8 minutes until nice and golden.
