Old Time Favourite Toad in the Hole

What a pleasing and comforting dish of the old days!

Serves 3

Ingredients

Your favourite sausages 8-10
Streaky bacon rashers 8-10
Batter:
Flour 125g
Eggs 2
Milk 180ml
Gravy:
Onions 2
Red wine 1 glass
Beef stock 400ml
Flour, butter, sugar as required
Worcester sauce as required
Salt & pepper as required

Method

Wrap one rasher bacon per sausage.

Preheat the oven 210-220C.

Put 2-3 tbsp oil in an ovenproof dish and put in the oven.

Put all the batter ingredients in a bowl and mix. Keep aside to rest for 15-20 minutes.

Put some oil in a frying pan and fry the sausages wrapped in bacon to brown them.

Remove the oven dish from Step 3 and put in the sausages evenly. Pour in all the batter from Step 4 in one go to get a good sizzle. Put in the oven for 20-30 minutes - don't open the oven door!

In the meantime make the gravy: put the oil in a pan and add the finely sliced onion until soft and brown.

Add the wine and allow the alcohol to evaporate. Add the stock and bring to the boil. Turn down to simmer for 10-15 minutes.

Season with the salt & pepper and Worcester sauce and serve alongside Step 6

Tips & Note

●Make sure you whisk the batter to get a smooth texture, it should be thick like double cream
●For a thicker gravy, put equal quantities of flour and butter, mix well and turn the heat off as soon as it starts to boil
