Apple & Pork Burgers

The apple makes these burgers nice and juice.

Ingredients

Apples (any variety) 2
Minced pork 500g
Onion (small) 1
Streaky bacon rashers 3
Egg 1
Breadcrumbs 30g
Sage 1/2 tsp
Vegetable oil 1 tbsp
Salt & pepper a little
Sauce:
White wine 4 tbsp
Anchovy fillets 4
Single cream 80ml
Wholegrain mustard 1.5 tbsp
Capers 2 tbsp
Parsley 2 tbsp

Method

Peel the apples and grate coarsely. Finely chop the onion and slice the bacon to 5mm strips.

Put all the ingredients except the sauce ingredients and vegetable oil in a bowl and knead together thoroughly.

Divide the mixture into 4 even parts and flatten to make oval burgers.

Put the oil in a frying pan on medium heat and carefully add the burgers. Put the lid on and cook for 3 minutes on one side then turn over and cook for 3 minutes on the other.

Transfer to a serving dish. Put the same frying pan on low heat and add the wine and anchovies.

Melt the anchovies and add the remaining sauce ingredients and bring to the boil. Pour over the burgers.

You could add fried apple slices in butter with the burgers.
