Stir Fried Carrots with Tahini Dressing

Very healthy with lots of carrots and a strong sesame flavour.

Ingredients

Carrots (medium) 2
Sesame oil 1 tsp
Tahini 1 tbsp
Noodle broth (mentsuyu) 2 tbsp
Mirin 1 tbsp
Chilli pepper a pinch
Sesame seeds as you like
Parsley as you like

Method

This is the tahini I used.

Peel the carrots into fine ribbons.

Put 1 tsp sesame oil in a frying pan and fry the carrots on high heat. When the carrots are softened, add the tahini, noodle broth, mirin and chilli pepper.

Transfer to a serving dish when the carrot absorbs the sauce. Sprinkle with the sesame seeds and parsley and serve.

You can make this in 3 minutes, apart from peeling the carrots, it's so quick!

Tips & Note

Be careful how much tahini you add otherwise it could become a bit too sticky.
