Smoked Mackerel & Cucumber Pickle

Just add pickled cucumber and seaweed to the smoked mackerel for a quick and tasty snack or starter.

Ingredients

Smoked mackerel fillets (medium) 2
Cucumber 10cm
Wakame seaweed 1 tbsp
Dried chilli 1/2
Vinegar 2 tbsp
Light soy sauce 1 tsp
Sugar 1 tbsp
Noodle broth (mentsuyu) 1 tsp
Dashi granules 1 tsp
Water 6 tbsp
Sesame oil 1 tsp
Sesame seeds as you like

Method

I used this boneless smoked mackerel from Morrisons.

Take out 2 medium fillets and cut into bitesize pieces. You could eat this straight from the pack as it's cooked.

Put all the other ingredients except the cucumber and sesame seeds in a bowl.

Finely slice the cucumber and squeeze out the moisture.

Add the cucumber and mackerel to the bowl at Step 3. Marinate for 1 hour in the fridge before serving. Sprinkle with sesame seeds.

Tips & Note

Enjoying some pickles ahead of dinner really stimulates your appetite, so it's good to have some vinegary things ready.
