Japan's Favourite Saba no Miso-ni Using Tinned Mackerel

Ingredients

Tinned mackerel (in brine) 1
Spring onion 20cm
Ginger slices 3-4
Fish stock cube 1/4
Hot water 100ml
Sugar 1 tbsp
Mirin 1 tbsp
Miso 1 tbsp

Method

Here is what I used in this recipe.

Open up the tinned mackerel. Dissolve the fish stock cube in the hot water.

Add the sugar, mirin, miso and fishstock to a pan. Put the heat on high.

Bring to the boil, then turn the heat down to medium. Add the mackerel (not the brine) and ginger.

Baste the mackerel with the sauce and simmer for 3 minutes.

Transfer to a serving dish, garnish with the finely chopped spring onion and enjoy.
