Steam Fried Razor Clams & Sugar Snap Peas

Ingredients

Razor clams 6
Garlic 1 clove
Oil 1 tbsp
Sugar snap peas 1/3 pack
White wine 50ml
Butter 1 tbsp
Soy sauce 1/2 tbsp

Method

Wash the razor clams to remove any sand.

Fry the finely chopped garlic in oil, then add the clams and peas.

Mix the ingredients together then add the white wine. Put the lid on to steam fry.

Cook for 2 minutes.

Remove the lid. All the clams must be opened.

Fry for another minute to allow the alcohol to evaporate, mixing gently.

Add the butter and soy sauce and lightly mix before serving.
