Pickled Romano Peppers

Romano peppers look like giant chilis but they are not hot at all, in fact they're quite sweet. Soak in sweet vinegar and keep in the fridge.

Ingredients

Romano peppers 2
Salt 1/4 tsp
Sushi Vinegar or sweet vinegar 2 tbsp

Method

Remove the seeds from the romano peppers and cut to 3mm slices.

Put the slices in a bowl and mix with the salt. Keep for 15 minutes then drain any moisture.

Sprinkle over the sweet vinegar and keep in the fridge for 3 hours. It's ready.

Tips & Note

Remove all the seeds from the peppers carefully. You can add sesame oil or ginger at Step 3 if you like. Yellow and orange romano peppers are also available so this can be a colourful pickle.
