Fennel Tempura

Fennel is a lovely spring vegetable and makes good tempura.

Ingredients

Fennel bulb 1
Plain flour 40g
Cold sparkling water 80ml
Vegetable oil for frying as required
Miso 2 tbsp
Sake 1 tbsp
Mirin 1 tbsp
Brown sugar 1 tbsp

Method

This is the fennel.

Chop into half. Leave the base intact, then cut 1cm slices.

Put the miso, sake, mirin and sugar in a pan on low heat and cook for 5 minutes. Remove from the heat.

Put the flour in a bowl and add the cold water. Mix lightly with a spoon and keep in a cold place.

Run the fennel slices through the batter at Step 4 and deep fry until light and golden. Pour the sauce from Step 3 over it and serve.

Tips & Note

To prevent the fennel from collapsing into leaves, keep the base intact when you cut into slices.
