Pickled Mooli

Super easy using sushi vinegar.

Ingredients

Mooli (daikon) 1
Sushi vinegar & water 1:2
Salt as required
Dried chilli as required

Method

Peel the mooli and slice thinly.

Rub in the salt and keep aside for 30 minutes.

Squeeze tightly to remove any moisture and put into an empty jar with the whole dried chilli. Add 1 part sushi vinegar and 2 parts water. Close the jar and keep in the fridge.

Tips & Note

At Step 3, you can add lemon zest if you like.
