How to Make Chilled Ramen (Hiyashi Chuka) for Hot Days

Even when it's hot and you don't have an appetite, you must eat properly. Enjoy cold ramen noodles which are full of vitamins, carbohydrates and protein to keep you full and well!

Ingredients

Sugar 2 tbsp
Vinegar 4 tbsp
Soy sauce 5 tbsp
Sake or white wine 3 tbsp
Sesame oil 3 tbsp
Oyster sauce 1 tbsp
Lemon juice 2 tbsp
Ramen noodles for 2 people
Mustard as you like
Toppings:
Cucumber, omelette, ham, tomato, etc... as you like
Nuts 2 tbsp
Sesame seeds as you like

Method

Put the sugar, vinegar, soy sauce, sake and sesame oil in a small pan and cook off the alcohol while warming through on low heat.

Add the oyster sauce and lemon juice, then immediately turn off the heat. Whisk lightly, cool slightly before putting in the fridge.

Cut the cucumber and ham into thin slices, shred the thin omelette and slice the tomato into 8.

Boil the noodles then cool with cold water and drain. Transfer to a serving dish and cover with the shredded toppings. Sprinkle with some crushed nuts.

Pour a ladle-ful of chilled sauce from Step 2 and finish with some sesame seeds on top. Ooops, don't forget the mustard!
