Ingredients

Mcvitie's Digestives (plain) 8
Butter 50g
Philadelphia cream cheese 260g
Eggs 2
Double cream 210g
Granulated sugar 90g
Self raising flour 3 tbsp
Lemon juice 2 tbsp

Method

Put the Digestive biscuits in a ziploc bag and crush finely with a rolling pin or tenderiser.

Put the butter in a bowl and microwave for 30 seconds, then add the crushed biscuits and mix well.

Put Step 2 in a lined oven tin and use a flat glass or similar to press firmly.

Put the cream cheese in another bowl and microwave for 30 seconds to soften slightly. Preheat the oven to 170 °C.

Put the eggs, sugar, lemon juice and self-raising flour in another bowl and stir with a whisk.

Add the double cream and cream cheese into Step 5 and mix well with the whisk.

Pour the mixture into the oven tin at Step 3 and bake for 40 minutes. If you can, cool it in a refrigerator before serving.
