Scrambled Eggs with Kippers on Rice ( Nishin Donburi)

Use tinned kipper fillets to make this tasty rice dish.

Ingredients

Tinned kippers in sunflower oil 1
Eggs 2
Onion 1/2
Spring onions 2
Dashi stock 100ml
Soy sauce 2 tbsp
Mirin 2 tbsp
Cooked rice for 1

Method

These are the tinned kippers in sunflower oil. There are 3 fillets and it costs only £1.50, great value.

The oil is not used, so pour it out and put the kippers on some kitchen paper to drain any oil.

Put the soy sauce and mirin into a small frying pan, bring to the boil then add the sliced onion and the coarsely chopped spring onion's white core.

Cook for 2 minutes then gently add the kipper fillets and cook for a further 2 minutes on medium heat.

Check for seasoning then add half of the beaten eggs and sprinkle the chopped green spring onion parts and cook for 1 minute.

Pour in the remaining beaten eggs, then put the lid on and steam cook for 1 minute. Transfer on top of the rice in a bowl. Job done!

Tips & Note

If you sprinkle some Nori seaweed will be wonderful. Enjoy with some chilli powder if you like.
