Healthy Miso Soup with Cabbage & Egg

Sweet onion and cabbage mixed with the egg in this soup will surely have you crying out for more.

Ingredients

Water (soft) 500ml
Dashi stock granules 2.5g (1/3 tbsp)
Cabbage leaves 3-4
Onion (medium) 1/2
Egg 1
Miso (red) 40g (3 level tbsp)
Spring onion 1/2

Method

I used pointed cabbage - when cooked with the onion in 500ml water, it will reduce down to 400ml.

When the water boils, add the dashi stock and turn down to medium heat. Add the sliced onions and cook for 2 minutes.

Add the roughly chopped cabbage and cook for a further 2 minutes.

Add the miso through a strainer or dissolved in a ladle to prevent lumps.

Pour in the beaten egg and stir once. Turn the heat off and wait for 1 minute.

Transfer to a serving bowl and sprinkle finely chopped spring onions on top. You can serve in a mug or tea cup, completely as you like!
