Cold & Creamy Turnip Soup

Very healthy and mild, good on a hot summer's day.

Ingredients

Turnips 3
Onion 1
Water 600-700ml
Milk 100ml
Chicken stock cube 1
Bay leaf 1
Salt & pepper a little
Butter 2 tsp

Method

Chop the turnips into wedges and finely slice the onion.

You can boil the turnip tops (green parts) in salted water, finely chop and use as the garnish.

Put the butter in a frying pan and fry the onions on medium heat until translucent. Add the turnips and fry lightly.

Add the water, stock cube and bay leaf and simmer until the turnips are cooked through.

Allow to cool, then remove the bay leaf and blend.

Pour the soup into the frying pan and add the milk, Bring to the boil then turn the heat off. Season with the salt & pepper.

Put in the fridge to cool. Garnish with the turnip tops before serving.

Tips & Note

Adjust how much water you add depending on your preferred consistency. Blend the soup well to make it very smooth.
