Spinach And Salmon Pie

It's super easy using smoked salmon.

Ingredients

Spinach 120g
Smoked salmon 70g
Garlic 1 clove
Olive oil 1 tsp
Puff pastry sheet 1/2
Salt & pepper a little
Egg 1/2

Method

Either microwave the spinach or boil in hot water for 1 minute.

Soak the spinach in water and drain well, chop into 3cm lengths.

Heat up some oil in a frying pan on medium heat. Add the finely chopped garlic.

When you can smell the garlic, add Step 2 and stir fry for 5 minutes. Adjust for seasoning with salt & pepper.

Allow to cool, then remove any moisture. Lay onto the smoked salmon and wrap it with it.

Cut the pastry sheet to 20x15cm and brush with beaten egg.

Place Step 5 on the bottom half of the pastry sheet and cover with the top half of pastry. Seal the open edges with a fork.

Brush the top with beaten egg.

Preheat the oven 200C and bake for 15-20 minutes. When it's golden brown, it's ready.

The pastry sheet is wrapped in a blue sheet - it's really good because you can wrap any leftover pastry in this blue sheet for later use.

Tips & Note

●You could use ham or bacon instead of smoked salmon, but they're a bit salty, so reduce the salt when you cook the spinach.
●Serve with watercress or baby tomatoes.
