Kale Muffins

A beautiful colour, healthy too - my kids love it! I make this for breakfast or a snack for the kids if I think they're a bit low on vegetables.

Ingredients

Kale 1/2 pack (100g)
Milk 100ml
Unsalted butter 100g
Honey or sugar 1 tbsp
Eggs 2
Flour 220g
Baking powder 1 tsp
Salt 3g
Pepper as required
Roasted walnuts 50g

Method

Preheat the oven 180C.

Boil the kale for 8-10 minutes, leave some aside for the garnish. Blend the rest with the milk.

Mix the room temperature butter with a whisk in a separate bowl. Add the honey and eggs and whisk again.

Put Step 2 into Step 3 and add the sifted flour, baking powder, salt & pepper and mix thoroughly.

Crush the roasted walnuts and add to Step 4.

Pour into a muffin tray and add the kale garnish. Bake for 20 minutes at 180C. Allow to cool before serving.

Tips & Note

Kale is quite hard so it really needs to be well cooked to be enjoyed.
