Leeks in Miso Vinaigrette

Leeks are quite acrid when raw but as soon as it cooks, it becomes deliciously soft and sweet.

Ingredients

Leek 1
Miso (red) 2 tbsp
Rice vinegar 2 tbsp
Sugar 1.5 tbsp
Dashi stock granules a pinch
Chilli powder a pinch

Method

These are leeks.

Remove the dark green leaves and grill the leeks for 10 minutes until the surface chars. Peel off the charred leaves.

When these vegetables are cooked (like onion or spring onions), some say they are as sweet as a melon! Chop the leeks into bitesize pieces and put in a bowl.

Add all the other ingredients and mix to combine well, it's ready to serve.
