Potato, Broccoli And Cheddar Cheese Croquettes

These are delicious as they are but you can of course add your own ingredients.

Ingredients

Potatoes (medium) 3
Broccoli head 1/2
Butter 1+ tbsp
Cream 1 tbsp
Cheddar cheese 50g
Salt & pepper as required
Flour, egg & breadcrumbs as required
Vegetable oil for frying as required

Method

Peel the potatoes and chop into pieces.

Put into a pan and wash the excess starch. Add salt and start to boil.

When they begin to soften, add the broccoli and cook until softened.

Drain the water and let any moisture evaporate. Add butter, cream, salt & pepper.

Mash, mash, mash...

Cool down the green mash.

Add the coarsely grated cheddar cheese and mix well.

Make round balls using an ice cream scoop if you have one. You could add any leftover meat sauce or ham at this point if you have any.

Dredge in flour, dip in beaten egg and coat in breadcrumbs. Leave in the fridge for 15 minutes to make it easier to fry.

Deep fry on a high heat (180C) until evenly golden brown. Remove to kitchen paper and serve.

Tips & Note

This time I made balls, but you could flatten them so that they cook thoroughly and become nice and golden at the same time.
You can have these with your favourite sauce.
