Pickled Salmon & Grated Yam on Rice (Donburi)

Ingredients

Soy sauce 200ml
Mirin 200ml
Sake 50ml
Fresh tuna or salmon for 2 people
Yam 5-10cm
Wasabi, spring onions as required
Cooked rice for 2 people

Method

The soy sauce, mirin and sake should be in a ratio of 4:4:1. Mix in a pan and heat to just before boiling then simmer on medium heat for 10 minutes to reduce by 20%. Allow to cool.

Cut the fresh fish to bitesize pieces.

When the sauce from Step 1 reaches room temperature, marinate the fish for 20 minutes.

Transfer the fish onto just cooked rice. Grate the yam and serve on top. Garnish with wasabi, yuzu or finely chopped spring onions.

Tips & Note

Don't boil the marinade otherwise the burnt soy sauce will give a bitterness.
