Chicken & Winter Vegetable Pot au Feu (Oden)

Ingredients

Chicken drumsticks 4
Carrot 1
Cabbage 1/4
Swede 1/2
Sausages 4
Boiled eggs 2
Konjac potato (optional) as you like
Tofu (optional) 1/2
Kombu as required
Dashi stock granules 2 tsp
Soy sauce 2 tbsp
Water as required

Method

Put the water and kombu in a large pan and keep for 1-2 hours. Cut the carrot, swede, konjac potato and tofu to bitesize pieces.

Add the chicken drumsticks, carrots, swede and sausages to the pan then turn the heat on. All the ingredients should be immersed in the water.

When it boils, remove any scum. Remove the kombu.

Simmer for 20-30 minutes. When the chicken is cooked, add the stock granules and soy sauce.

Add the chopped cabbage, konjak potato, tofu and boiled eggs and simmer for 10 minutes. When the cabbage is soft, it's ready.

Serve with some mustard.
