Simmered Chicken with Turnips

The turnips absorb the lovely flavours.

Ingredients

Chicken thighs (boneless) 4
Turnips 3 (500g)
Green beans as required
Dashi stock 200ml
Seasonings:
Light soy sauce 3 tbsp
Sugar 1 tbsp
Sake 2 tbsp
Mirin 1 tbsp

Method

This is a turnip.

Remove the skin from the chicken and cut into half. Peel the turnips and cut into 8 wedges each. Lightly boil the green beans and cut into 3.

Add some kombu into a pan (if you have it) then the turnips and chicken. Add the dashi stock and the seasoning ingredients and turn the heat on medium.

Once it's boiled, remove any scum and turn the heat down to low and simmer until the turnip is soft. It's ready, so garnish with the green beans before serving.

Tips & Note

●When all the ingredients are softened, turn the heat off and allow to cool. The turnips will absorb the lovely chicken flavour. Heat up again before serving.
