Toasted Halloumi Salad with a Citrus Dressing

I love Nigella! This is a recipe she made on BBC's Saturday Kitchen. I just changed the sauce a bit.

Ingredients

Halloumi cheese 1 (250g)
Red chillies 2-3
Lime 1
Honey 3 tbsp
Leaf spinach 50-80g

Here are the ingredients.

Deseed and cut the red chillis into 2mm slices. If you like it hot, you don't have to deseed.

Put the honey in a small pan and squeeze in the lime juice. Add the chillis and heat on high.

Once it boils, turn the heat off and allow to cool.

Slice the haloumi cheese 5mm wide and dry fry (no oil) in a frying pan for 1 minute each side to brown nicely.

Put the leaf spinach onto a serving dish then top with the cheese. Pour over the dressing.

The cheese firms as it cools so it's best to eat while it's warm.

Tips & Note

The sweet and hot and nicely sour dressing is delicious. Add more or less of the dressing amounts as you like.
