Grated Courgette Margherita Pizza

Who would think courgette works on a pizza - it really does!

Ingredients

Courgettes (medium) 3
Salt 1 tsp
Strong flour 260g
Baking powder 1 tsp
Strong flour for dusting as required
Tomato sauce (ready) 200g
Mozzarella cheese (grated) 200g

Method

Grate the courgettes, squeeze and remove the liquid. This weight should be 220g.

Add the strong flour, salt and baking powder.

Knead until the dough stops being sticky. Keep aside for a while.

Divide into two balls. Dust a chopping board and flatten to thin rounds by hand.

Make it 5mm thick x 30cm across.

Spread the tomato sauce over the top evenly and sprinkle with the cheese.

Put in a preheated oven 200C for 9-10 minutes. It's ready!

You can make 2 pizzas with this amount of ingredients.

Tips & Note

●Adjust the strong flour depending on the weight of the squeezed courgettes. Try to use 1.2 times the amount of flour.
