Herrings In A Crispy Porridge Oats Crust

Instead of the typical breadcrumb crust, use porridge oats. The aroma when it fries is irresistible. Works well with trout too.

Ingredients

Herring fillets (small) 4
Egg 1
Porridge oats 1 cup
Salt & pepper as required
Red onion (finely chopped) 1/4-1/2
Celery (finely chopped) 1
Cornichons (finely chopped) 1-2 tbsp
Garlic (finely chopped) 1/2-1 clove
New potatoes (boiled) 8-10
Olive oil 3-4 tbsp
Lemon juice 1/2

Method

Beat the egg and dip the herrings in. Add salt & pepper to the porridge oats and coat the herrings.

Put the oil in a frying pan and fry the herrings on both sides until nice and golden.

Mix all the other ingredients from the red onions down to make a tasty potato salad. Serve alongside the fried herrings.

Serve with some lemon wedges if you like.

Tips & Note

It's traditional to have an oat crust in Scotland. It's crunchy and smells delicious. Make the potato salad at Step 3 while the newly boiled potatoes are still hot so that they absorb all the flavours.
