Broccoli & Tuna Pasta with Anchovy Dressing

Ingredients

Pasta for 2 people
Broccoli 1 cup
Onion 1/2
Anchovy fillets 1/2 tin
Tinned tuna (in sunflower oil) 1
Olive oil 2 tbsp
Salt & pepper & dried chilli as you like

Method

Cook the pasta. Slice the onion and microwave for 30 seconds. Flake the anchovy with a fork and mix with the olive oil and onions.

Just before the pasta is ready, add the bitesize broccoli and cook together. Drain the tinned tuna and flake into large chunks.

Drain the pasta and broccoli and mix with the anchovy dressing from Step 1. Add the tuna, salt & pepper and chilli flakes and mix.
