Vermicelli Noodle Salad

Highly recommended for when you don't have a big appetite.

Ingredients

Vermicelli 100g
Chicken thighs 4
Sake 3 tbsp
Ginger peel as required
Spring onions as required
Eggs 3
Spring onion 1
Tomatoes 2
Cucumber 1
Sesame dressing:
Tahini or sesame paste 3 tbsp
Chicken liquid (see below) 2 tbsp
Sugar 2 tbsp
Soy sauce 2 tbsp
Sesame oil 2 tbsp

Method

Rehydrate the vermicelli in hot water then chill in cold water.

Put the chicken with bone in a dish and add the roughly chopped green parts of a couple of spring onions and ginger peel on top.

Add the sake and wrap the bowl with cling film. Microwave for 3-5 minutes. Cut the whole spring onion into short fine strips.

Cut the cucumber into short fine strips. Remove the tomato skin (boil in hot water then plunge into cold water) and cut into wedges. Make a thin omelette, roll it up and cut into very fine strips.

When the chicken has cooled, tear into shreds. Mix all the sesame sauce ingredients together in a bowl.

Put the vermicelli in a serving dish and top with the chicken from Step 5. Serve alongside the garnishes from Step 4 and pour over the sesame dressing. Top with the fine strips of spring onions.

Tips & Note

●Once the vermicelli is drained, cover with the sesame oil to stop it sticking togther
●Once the chicken is cooked, keep it in the liquid to stay moist until ready to serve
