[Video] Roasted Carrot Salad with Soy Sauce & Balsamic Dressing

You will probably eat more than you think, it's delicious.
The combination of Staub roasted carrots and balsamic dressing is superb.

Ingredients

carrots 5-6 (400g)
olive oil 1 tbsp
A. Japanese soy sauce 2 tbsp
A.Balsamic vinegar 1-2 tbsp
A Horseradish 1 tsp
Fresh salad bag as you like
Chives (chopped) 10g
Toasted sesame seeds 1 tsp

Method

Peel the carrots and cut into half lengthwise and across to make into 4.

Put oil into a heavy pan (such as a Staub), and with a medium heat fry the carrots lightly. Turn down the heat and cook for a further 6-7 minutes with the lid on.

Remove the lid, turn the carrots over and steam again for a further 6-7 minutes with the lid on.

Turn off the heat and keep with the lid on.

Make the dressing: put all the ingredients A into a small pan and cook on a very low heat for 5 minutes.

Put the salad onto a place and place the carrots on top. Pour the dressing and chives and sesame seeds.

Tips & Note

Mix the soy sauce and balsamic with any leftover horseradish from your last Sunday lunch - this dressing is so simple but so good. It also goes well with chicken or any other meats. It's quite thick so to lighten it, add some stock or oil, or whatever you prefer. I just wanted to use my Staub, then I found I had lots of carrots.
